 Green Pandan Cake

 

1 package Tapioca Starch ( blue bag )

10 eggs

1-13.5 can of coconut milk

11/2 cup sugar

3 tbs baking powder

3 tbs vegetable oil

1 tsp vanilla extract

2 tsp pandan extract *

( * may find it in most Vietnamese grocery )

 

Direction:

 

Preheat oven @ 350 degree.  You may use 1 large loaf, bunt cake or 10 inch round pan.  Once you are comfortable with this recipe, you may use any size pan as you wished.  Just make sure you spray pan before pour cake mix.

 

1.Add all dry ingredients in large mixing bowl.

2. Mix in eggs, coconut milk, oil, vanilla, pandan extract and green food color.

3. Mix well about 3 minutes, but not too hard.

4. Pour mix in baking pan and bake about 30-45 minutes.

5. Test cake with toothpick right in center.  Cake should be slightly brown and dry on top.

6. Let cake cool about 30 minutes before cutting with bladed knife.

 

Note:  Loaf & bunt cake pan may take longer to bake.
